measure water consumption

Congratulations on your project. I have set up something similar with esphome and ultrasonic sensor, I know at all times how many liters of water the tank has, my question is:
How can I create a ene esp home sensor that measures the water consumption of the tank?
This is based on the sensor that I already have in esphome and that at all times knows the liters of the tank and that when the level drops it adds it to consumption, but taking into account that the tank can be filled at any time and the liters go up.
I would appreciate any help or guidance on where to look at something about it.
