[otel] Better subgraph traces

Subgraph traces (Envelop plugin) are very limited. It only covers the execution phase and resolvers. Official OTEL GraphQL instrumentation have complete graphql phases spans. 

We should have a unique OTEL plugin usable in all cases. This way, it would be easy to share common instrumentation code.
