adjust tests that are supposed to be mocked

took me longer than I'd like to admit to realize that some tests weren't being mocked and hitting the database which caused some of them to fail 😅 I left comments on the ones that are failing in #18 but I think it would be good to go through and check all of the tests to make sure they're being mocked correctly
